Zucchini has the reputation of being easy to grow.
Which is why zucchini is a popular plant for the vegetable part of the garden.
Often zucchini is so easy to grow that every year
people are surprised with such an overwhelming surplus
of zucchini in their garden that it overflows their pantries.
This day is for awareness and empathy towards
the tasty problem of having too much food. This is a wonderful day to share your abundance of zucchini
or buy some from local farmers
who might just have their fresh harvest.
Make zucchini dishes! Zucchini makes a pretty good low carb spaghetti
if you slice it thin enough, stir-fry lightly
and serve with a tasty bolognese
and/or a well aged cheese. Throw zucchini on the BBQ in slices
for a juicy addition to your burger. Or stomp it into jars of pickled greens
for a tangy snack later in the year!
